The Castello Monaci is located in Salice Salentino, in the province of Lecce in Puglia.
The cellar is equipped of modern winemaking tools, including a refrigerated pressing system with small capacity steel tanks, heat-conditioned with double cells,
to be able to vinify limited quantities of grapes separately, highlighting the peculiarities of each.
The vineyards of Castello Monaci are trained using spurred cordon, following strict guidelines, to minimize the impact of processing on the environment and natural resources.
